Ever wonder how to get more vegetables and fiber into your children, in a way that they will enjoy? These muffins are delicious and the only thing they'll notice is the subtle sweetness the veggies add.
They are high in fiber, vitamins A&C and folate... all important nutrients to grow healthy kids. They're also cholesterol free and packed with omega-3s! They're also great for freezing and thawing, as needed.
Hidden Veggie Muffins 1/3 c. hot Water ¼ c. ground Flax Seed 1/2 c. Apple Sauce 1/3 c. Agave Nectar 2 T. Maple Syrup 1 t. Vanilla 1 c. grated Carrot 1 c. grated Zucchini 1 grated Red Apple 1 ¾ c. Whole Wheat Pastry Flour 2 t. Baking Powder 1 t. Cinnamon 1/2 t. Salt ½ c. chopped Walnuts, optional
Heat oven to 350 Degrees.
In a small cup, add ground flax seed to hot water and stir with a fork. Allow to sit for 5 minutes, until mixture thickens into an egg-like consistency. Mix agave nectar, maple syrup, vanilla & applesauce in a small bowl. Stir in zucchini, carrot & apple. In another bowl mix flour, baking powder, cinnamon, and salt. Stir the flax seed mixture into the wet mixture. Then, add dry mixture to the wet mixture and stir well. Place into muffin tins. Top with chopped walnuts, if using.
Bake for 25-35 minutes, until muffins are cooked through. Muffins should be moist and chewy.
